Some dishes aren’t just cooked…
They arrive with a feeling.

This recipe began on one of those quiet evenings — the kind where the day has been long, your energy is fading, and your heart wants something warm, nourishing, and a little bold. I wasn’t looking for anything fancy. Just a bowl that hugged the soul and gently brought the senses back to life.

That’s when I remembered a beautiful spark I once came across on The Happy Foodie:

I wandered into the kitchen, pulled out a packet of spelt spaghetti (nutty, earthy, wonderfully wholesome), and rescued a bunch of mushrooms waiting patiently in the fridge. What started as a simple dinner idea slowly turned into a calm, almost meditative moment.

As the mushrooms hit the pan, everything changed.

✨ The aroma rising like a warm cloud.
✨ The way garlic, sesame, and chilli wrapped the kitchen in a promise of deep, comforting flavour.

Spelt spaghetti has this beautiful bite — a gentle firmness that makes you slow down and savour every forkful. Paired with soft, spicy, silky mushrooms, the result is a bowl that feels vibrant, balanced, and quietly nourishing.

It comes together in minutes, yet tastes like something made thoughtfully after a long day — a little gift to yourself.

This isn’t just spaghetti.

It’s mushrooms bathing in spice and comfort.

🌿 Ingredients (Serves 2–3)

🌱 What You Need:

·         1 tablespoon vegetable oil
A simple, smooth base to start the magic.

·         4 spring onions, finely chopped
Fresh, mild sweetness that brightens the whole dish.

·         300g chestnut mushrooms, sliced
Earthy, rich, and perfect for soaking up flavour.

·         2 teaspoons sesame seeds
Nutty crunch in every forkful.

·         2 garlic cloves, peeled and minced
Warm, fragrant, and deeply comforting.

·         2 tablespoons soy sauce
Salty umami that rounds everything beautifully.

·         2 teaspoons toasted sesame oil
Silky aroma with warm, nutty depth.

·         ¼ teaspoon dried chilli flakes
Just enough heat to wake up the flavours.

·         Zest of ½ unwaxed lemon + 1 tablespoon lemon juice
Freshness that keeps the dish bright.

·         Salt (for the pasta water)
Essential to season the spaghetti properly.

·         200g spelt spaghetti
Nutty, wholesome, and perfect for a hearty bowl.

·         Leaves from a small bunch (25g) flatleaf parsley, finely chopped
Green, fresh, and finishing everything off with colour.


🍳 Method (Professional, Clear & Easy to Follow)

1. Prepare the Pasta Water

Fill a large pan with water and bring it to a boil. While it heats, begin making the sauce.

2. Cook the Aromatics

Heat the vegetable oil in a wide pan (large enough to hold the spaghetti later).
Add the spring onions and sauté for about 1 minute until they soften and turn bright green.

3. Sauté the Mushrooms

Add the sliced chestnut mushrooms.
Cook over medium-high heat for 3–4 minutes, stirring often, until they soften and start to brown slightly.

4. Build the Flavour Base

Stir in:

·         sesame seeds

·         minced garlic

·         soy sauce

·         toasted sesame oil

·         chilli flakes

·         lemon zest and juice

Mix well.
Cover the pan with a lid, reduce heat to low, and let it simmer for 5 minutes.
The mushrooms will turn tender, glossy, and beautifully flavoured.

5. Cook the Spelt Spaghetti

When the water boils, salt generously.
Add the spaghetti and cook according to the packet instructions — start checking a few minutes early to avoid overcooking.

If the mushroom mixture finishes early, simply switch off the heat and leave it covered.

6. Bring Everything Together

Using tongs, lift the cooked spaghetti straight into the mushroom pan.
Toss with most of the chopped parsley.

If you prefer draining the pasta, reserve some pasta water first.
Add a splash at a time to help the sauce cling to the spaghetti.
You won’t need much.

7. Serve

Divide into warm bowls and sprinkle with the remaining parsley.
Eat immediately, while the flavours are bold, bright, and comforting.

Make Ahead / Storage

This dish is best enjoyed fresh.
However, leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Enjoy it cold — reheating isn't recommended as the texture of the mushrooms and pasta may change.
