Smitten Kitchen! Juicy shrimp, garlicky tomato sauce, and tender spaghetti make
the perfect weeknight comfort food.
A
Story from My Kitchen
It was one of those chaotic weekdays
when the world felt too busy, and I craved a meal that was simple but special.
My fridge had a few cherry tomatoes, some garlic, and frozen shrimp. I wasn’t
expecting anything fancy—just something quick to fill the stomach.
As I tossed the ingredients
together, something magical happened. The shrimp turned perfectly tender, the
cherry tomatoes released a sweet, garlicky aroma, and the pasta soaked up every
bit of flavor. In that moment, my tiny kitchen felt like a cozy Italian trattoria,
and dinner became more than just food—it became a little celebration in a bowl.
Ingredients
(Serves 2–3)
- 200g spaghetti or pasta of your choice
- 250g shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, finely chopped
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon chili flakes (optional, for gentle heat)
- Salt & freshly ground black pepper, to taste
- Handful fresh basil leaves
- Grated Parmesan or Pecorino, for garnish
Instructions
1️⃣ Cook
Pasta:
Bring a large pot of salted water to a boil. Cook spaghetti until al dente.
Reserve ½ cup of pasta water for later.
2️⃣ Sauté
Shrimp:
Heat olive oil in a pan over medium heat. Season shrimp with salt and pepper.
Cook 2–3 minutes per side until pink and just cooked. Remove shrimp and set
aside.
3️⃣ Make the
Sauce:
In the same pan, sauté onions until soft. Add garlic and cook until fragrant.
Toss in cherry tomatoes and chili flakes, cooking until tomatoes soften and
release their juices.
4️⃣ Combine
Everything:
Return shrimp to the pan. Add drained pasta and a splash of reserved pasta
water. Toss to coat evenly. Tear in fresh basil leaves for an aromatic finish.
5️⃣ Serve
& Enjoy:
Plate immediately, sprinkle with Parmesan, and let the colors—ruby-red
tomatoes, golden shrimp, and vibrant green basil—make your bowl feel like a
feast.
A
Little Kitchen Story:
This recipe reminds me that even the
busiest days can end beautifully. A few simple ingredients, a little love, and
a little patience can create magic. Shrimp & Tomato Pasta isn’t just
dinner—it’s a reminder that comfort and joy can come together in under 30
